Hideto Tashiro working the wood-fired kiln with long tongs

Hideto Tashiro

Chef / Culinary Director

Start with the ingredient.

Not with a technique. Not with a finished dish in mind.
I look at what is in front of me and ask what would make it best.

Sometimes that means fire. Sometimes fermentation.
Sometimes it means doing nothing at all.

Skewered meat cooking over an open wood fire
Smoke rising from charcoal set inside a crab shell in an earthenware pot
Soba on a rough-glazed plate, seen from directly above
A browned, crisp-crusted dish on a blue-and-white porcelain plate
The dining room, with fire burning in the wood kiln beyond the counter
